In some regions, it is also called cabri. It is a white meat, which is as tender as veal. Although the meat is unfortunately not very well known in our urban areas, it is a highly prized dish among our neighbours. It is not available all year round (here, you can taste it from November to June), which is why it is considered a festive food. Its low cholesterol content means that it is suitable for all diets, from the most gourmet to the richest.
